Cottage Cheese Lava Cake
If you're like me and don't love the texture of cottage cheese, you’ve got to try this!
Ingredients (for 1 serving):
½ cup Breakstone's cottage cheese
1 egg
2 tbsp cocoa powder
2 tbsp oat flour
2 tbsp maple syrup (or sweetener of choice)
½ tsp vanilla extract
¼ tsp baking powder
Pinch of salt
½ oz dark chocolate (1 small square)
Instructions:
1) Blend all ingredients together until smooth.
2) Pour the mixture into a greased ramekin.
3) Press a piece of dark chocolate into the center.
4) Bake at 350°F (175°C) for 12-15 minutes or air fry at 325°F for 8-10 minutes, until the edges are set but the center remains gooey.
5) Let cool for a minute, then dig in!
