Asian Stir-Fry with Peanut Sauce

Change your stir-fry game with this creamy, and savory peanut sauce!

Servings: 4

Ingredients:
For the Peanut Sauce:
2 tbsp peanut butter
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 tsp grated ginger
1 tsp sesame oil


For the Stir-Fry:
1 lb chicken breast, sliced
1 tbsp sesame oil (for cooking chicken)
2 tbsp avocado oil (for cooking vegetables)
4 cups mixed stir-fry vegetables (bell peppers, carrots, broccoli, etc.)


Instructions:
1) Whisk together the peanut butter, soy sauce, rice vinegar, honey, ginger, and sesame oil in a small bowl.
2) Heat 1 tbsp sesame oil in a pan over medium heat and cook the chicken until fully cooked, about 5-7 minutes. Remove from pan.
3) Add 2 tbsp avocado oil to the same pan and stir-fry the vegetables until tender-crisp.
4) Return the chicken to the pan, pour in the peanut sauce, and toss everything to coat.
5) Serve hot with rice or noodles, and enjoy!
