Chicken Shawarma Salad

Easy, delicious and topped with a dressing you’ll love!

Ingredients:
For the Chicken:
2 cups shredded rotisserie chicken (I used Perdue)
1 tbsp olive oil
1 tsp paprika
1 tsp cumin
½ tsp garlic powder
½ tsp onion powder
½ tsp turmeric
½ tsp salt
¼ tsp black pepper

For the Dressing:
3 tbsp olive oil
2 tbsp tahini
Juice of 1 lemon
1 tsp honey
1 garlic clove, minced
¼ tsp salt
Water, as needed (to thin out)

For the Salad:
4 cups chopped lettuce
½ cup diced cucumbers
½ cup diced tomatoes
¼ cup chopped pickles
¼ cup chopped parsley

Directions:
1) In a bowl, toss shredded chicken with spices until evenly coated.
2) Heat olive oil in a pan over medium heat, then add the chicken. Cook for a few minutes until heated through and fragrant. Set aside.
3) In a small bowl, whisk together olive oil, tahini, lemon juice, honey, minced garlic, and salt. Slowly add water, whisking until the dressing reaches a pourable consistency.
4) Assemble the salad by layering lettuce, cucumbers, tomatoes, pickles, and parsley.
5) Top with the spiced chicken and drizzle with the dressing.
Serve and enjoy!
