One-Pan Chicken and Potatoes
Quick, easy, and packed with protein! This family-favorite chicken and potatoes recipe will make your weeknight dinners a breeze.
Ingredients:
2 lbs chicken thighs or drumsticks
3 medium russet potatoes, sliced
1 medium onion, sliced
3 cloves garlic, minced
3 tbsp olive oil
2 tbsp lemon juice
1 tsp smoked paprika
1 tsp garlic powder
½ tsp dried oregano
1 tbsp tomato paste
Salt and pepper to taste
1 cup chicken broth
Fresh rosemary
Directions:
1) Preheat oven to 400°F.
2) Slice potatoes, onions, and garlic, then spread them on a pan with the chicken.
3) In a bowl, mix olive oil, lemon juice, smoked paprika, garlic powder, oregano, tomato paste, salt, and pepper.
4) Pour the sauce over the chicken and veggies, tossing until everything is coated.
5) Add chicken broth and top with fresh rosemary.
6) Bake for 45 minutes or until the chicken is cooked through. Plate & enjoy!
