Green Goddess Salad

Fresh, crunchy and seriously addictive!

Ingredients:
½ head green cabbage, diced
3 Persian cucumbers, diced
3 green scallions, chopped

For the Dressing:
1 handful spinach
1 handful fresh basil
2 garlic cloves
1 small shallot
¼ cup cashews
¼ cup parmesan cheese
2 tbsp rice vinegar
¼ cup olive oil
Juice and zest of 1 lemon
½ tsp salt

Instructions:
1) Dice the cabbage, cucumbers, and scallions, then toss them into a large bowl.
2) In a blender, combine all dressing ingredients and blend until smooth.
3) Pour the dressing over the salad and mix well.
4) Serve with chips for dipping or use as a topping for chicken the next day.
