Berry Oat Bars

This is one of my favorite recipes so far!! They are delicious, full of fiber & flavor. They are a perfect breakfast, snack or even dessert. Throw them in your kids lunch, your work bag, ANYWHERE!

Ingredients:

1/2 cup blueberries
1/2 cup raspberries
2 tbsp water
1 ½ cups oats
½ cup oat flour
½ cup peanut butter
⅓ cup maple syrup
2 tbsp coconut oil, melted
½ cup dark chocolate, melted (optional, for drizzle)


Directions:
Prepare the Berry Jam:

1) Add blueberries, raspberries, and water to a pan. Heat gently, stirring occasionally, until the mixture thickens and becomes jam-like. Set aside to cool.

Make the Dough:
2) In a bowl, mix oats, oat flour, peanut butter, maple syrup, and melted coconut oil until it forms a crumbly dough.

Assemble the Bars:
3) Press most of the dough into a greased or parchment-lined pan, reserving some for the topping.

4) Spread the cooled berry jam evenly over the base.

5) Crumble the remaining dough over the jam and press lightly to secure.

6) Refrigerate for 2–3 hours, or until firm.

7) Slice into bars and drizzle with melted dark chocolate.
