Baked Chicken Quesadillas
An easy, and delicious weeknight dinner everyone will love!
Ingredients:
2 chicken breasts, sliced into thin strips
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
1 tsp garlic powder
1 tsp oregano
1 tbsp olive oil
6 Mission tortillas
1 ½ cups shredded cheese (cheddar, Mexican blend, or mozzarella)
Cooking spray
Directions:
1) Prepare the Ingredients: Slice the red and green bell peppers and onion, then set them aside. Slice the chicken breasts into thin strips.
2) Season the Chicken: In a bowl, season the chicken with salt, black pepper, smoked paprika, garlic powder, and oregano. Mix well to coat.
3) Cook the Chicken: Heat a pan over medium heat, add olive oil, and cook the chicken on both sides until fully cooked. Remove and set aside.
4) Sauté the Vegetables: In the same pan, add the sliced peppers and onions. Cook until softened, then remove from heat.
5) Assemble the Quesadillas: Take a Mission tortilla and sprinkle some cheese on one side. Add cooked chicken and sautéed peppers, then top with a little more cheese and fold the tortilla in half.
6) Bake: Place the quesadillas on a baking sheet, spray with cooking spray, and bake at 400°F (200°C) for about 10 minutes.
7) Flip & Finish: Flip the quesadillas halfway through baking to ensure both sides are crispy.
8) Serve & Enjoy: Slice and serve warm with salsa, guacamole, or Greek yogurt for dipping!
