Stuffed Mushrooms

Crispy, flavorful, and oh-so-delicious Stuffed Mushrooms - the perfect appetizer! As a dietitian, I love meals that balance taste and nutrition, and these stuffed mushrooms are a prime example.

Ingredients:
4 Slices turkey Bacon
1 lb. Small White Button mushrooms
1/4 Cup Parsley, minced
1 Clove Garlic, minced
4 oz. Cream Cheese, softened
3 Tbsp Italian Breadcrumbs
3 Tbsp Parmesan
1/4 tsp Kosher Salt
1/4 tsp Pepper

Directions:
1) Preheat oven to 400°F.
2) Cook turkey bacon until crispy, finely chop, and place in a bowl.
3) Finely chop mushroom stems, add to the bowl with bacon. Mix in garlic, parsley, cream cheese, Italian breadcrumbs, Parmesan, salt, and pepper.
4) Dip mushrooms in melted butter.
5) Stuff mushrooms generously with the flavorful filling, roll in panko breadcrumbs, and place on a baking sheet.
6) Brush the panko with melted butter and bake for 20-25 mins until golden brown and mushrooms are tender.
7) Sprinkle with a touch of kosher salt before enjoying these delightful bites!
