Often underestimated in their nutritional value, potatoes are a versatile and nutrient-rich addition to any meal. Whether you prefer baked potatoes or roasted sweet potatoes, incorporating them into your diet provides essential antioxidants, vitamins, and minerals.
While it might be tempting to join the low-carb bandwagon in pursuit of quick “weight loss” or “improved health,” cutting carbs entirely is neither necessary nor sustainable in the long run. So let’s not restrict our carb intake! By embracing carbs and incorporating them into our meals, we can enjoy a balanced diet that supports our health and well-being.
Below is a quick and simple recipe to make crunchy roasted red potatoes.
Ingredients:
Red potatoes
Olive oil
Salt
Pepper
Italian seasoning
Aged cheddar cheese
Chives
kosher salt
Instructions:
Wash potatoes and pat dry.
Slice potatoes into bite-sized pieces.
Pat the sliced pieces dry again.
Drizzle with olive oil, and season with salt, pepper, and Italian seasoning.
Place them on a baking sheet, ensuring space for optimal crunch.
Bake in the oven at a low temperature for an hour or until crispy and golden.
Once done, garnish with grated aged cheddar, chives, a sprinkle of salt, and a dash of pepper.
